"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Begin by cooking pasta until al dente. While pasta is cooking, prepare sauce: heat oil over medium heat, then add garlic. Saute for about 30 seconds, then turn heat to low and add basil. Stir for another 30 seconds until basil wilts. Pour in stock and simmer gently while you finish the pasta. Once pasta is cooked, drain and add it to the skillet with the basil. Toss well to coat the pasta. Add toasted pine nuts, cheese, salt and pepper to taste; toss again.

This is a great go-to meal for the evenings you are unmotivated to cook. Add grilled chicken for a more substantial meal. Fresh basil really makes this dish.
