6 Tbsp Butter
3/4 c Flour
1/8 tsp Cayenne pepper
¼ c fine grated cheese:
Gruyere, Comte, and Manchego

Directions:
Directions:
Pulse all ingredients in food processor just until dough forms. (Don’t over work). Gather dough into ball, and press into 5” round disc, wrap in plastic wrap and chill for 30 minutes, roll dough into 1/8” thickness on floured surface with floured rolling pin. Cut with 1 ½” round cookie cutter. Place wafers on non-stick cookie sheet or butter cookie sheet. Prick with fork. Bake 8-10 min until just golden. Watch carefully. Remove to racks to cool. Serve at room temperature. Store wafers in Tupperware for 3-4 days at room temperature, or in the fridge for a week. Preheat Oven to 400. These go very well with a sparking white wine or champagne and also good with a salad.
