8 medium carrots, peeled
1/2 cup raisins
1 8 ounce can pineapple chunks, reserve about 1/4 of the juice
1/4 cup shredded coconut
2 teaspoons lemon juice
1/3 cup mayonnaise

Directions:
Directions:
Coarsely chop pineapple and place into bowl. Shred carrots. Add carrots, raisins, coconut, mayonnaise and lemon juice to pineapple; toss lightly. Serve immediately.
