1/2 cup chopped onion
1 clove garlic, minced
1 pound ground beef
2 (10 oz) packages frozen chopped spinach, thawed and drained
1 pound ricotta cheese
6 ounces shredded mozzarella cheese
1/2 cup parmesan cheese
3 eggs, slightly beaten
1 Tblsp lemon juice
1 tsp salt
dash pepper
12 large manicotti shells, par boiled
1 16 oz jar pasta sauce

Directions:
Directions:
Brown the meat, then add onion and garlic and cook until tender. Drain off any fat. Combine the spinach, cheeses, eggs, lemon juice, salt and pepper with the meat and mix well. Fill noodles with spinach/meat mixture and place in a 9 x 13 baking dish. Cover stuffed noodles with sauce and then cover pan with foil and bake at 350 for 40 minutes. Remove foil, top with a sprinkle of mozzerella cheese and bake another 5 minutes or until cheese is melted.
