1 lb skinless, boneless chicken breast, cut into strips
3 c cut up fresh vegetables: broccoli, carrots, green and/or red peppers
1 can Campbells Reduced Fat Cream of Mushroom Soup or Campbells Reduced Fat Cream of Broccoli Soup.
1/4 c water
1 tbsp soy sauce
4 c hot cooked rice
vegetable cooking spray

Directions:
Spray skillet with cooking spray and heat over medium heat for 1 minute. Stir fry chicken in 2 batches until browned. Set aside. Remove pan from heat. Spray with cooking spray, add vegetables, soup, water, and soy sauce. Heat to a boil. Return chicken to pan and heat thoroughly. Serve over rice. Serves: 4
