2 Tbsp olive oil
1 lb. ground lamb or veal
1 large onion thinly sliced
1 green pepper, chopped
3 cloves fresh garlic minced
1-2 large bunches of Swiss Chard
1/4 tsp Salt
1/4 tsp Black pepper
4 tbsp tomato paste
c heavy cream

Directions:
Directions:
Wash and rinse Swiss chard. Remove stems, chop leaves into thirds. Heat oil in large saucepan over medium-high heat, add the meat and brown. When meat is about half done, add the onion and cook until golden brown. Add the green pepper and cook for two minutes. Add the garlic and cook for 1 minute. Add the Swiss chard, salt, pepper and tomato paste. Turn to low heat, cover and simmer for 5-10 minutes. Remove lid and add the cream. Cook over low heat for another 2 minutes. Serve over pasta. This freezes well
