3/4 c crushed vanilla wafers
3 eggs, separated
1/4 c lemon juice
Grated rind of 1 lemon
1/8 tsp salt
1/2 c sugar
1/2 c evaporated milk, chilled

Directions:
Directions:
Line a greased refrigerator tray or pan of equal size with half the vanilla wafer crumbs. Combine beaten egg yolks, lemon juice, rind, salt and sugar; cook in double boiler until thick. Cool. Whip chilled evaporated milk and add, with stiffly beaten egg whites, to the lemon mixture. Pour over wafer crumbs and cover with remaining crumbs. Package and freeze.

To serve: remove from freezer and cut into finger length slices or squares.
