Spinach and Sausage Calzone Recipe

Calzone dough (See recipe)
1 pound fresh spinach, steamed, well-drained and chopped
2 sausages (hot or sweet, depending on taste), cooked and sliced thinly
1 pound ricotta cheese
1/2 cup shredded mozzarella
Salt and pepper to taste

Directions:
Directions:
Combine spinach, sausage, ricotta, mozzarella, salt and pepper.
Roll out each ball of dough on lightly floured surface into circles of about 9 inches in diameter. Spoon equal portions of the cheese-sausage mixture on each circle of dough. Fold over the dough and seal the margin using a fork.
Place the calzones on a baking sheet, brush them with olive oil and bake in a preheated 425 oven for 30 minutes.
