1 cup sugar 4 T. butter 1 egg 1 cup bananas 1-1/2 c. flour 1/2 tsp. baking soda 1 tsp. vanilla 1/2 c. chopped nuts (optional)
Cream sugar and butter, add egg and beat until smooth. Add all other ingredients mixing well. Bake in a loaf pan that has been greased and coated with about 1/4 c. sugar for 50-60 minutes at 350°. Makes 1 loaf.
