1 lb chicken cooked
1 med onion chopped
1 med red pepper chopped
2 cans mexican stewed tomatoes
2 cans chili beans in sauce
1 can enchilada sauce
1/3 c sour cream
Chopped fresh cilantro

Directions:
Directions:
Spray slow cooker with Pam. Mix all ingredients, including juices from tomatoes and beans. Except sour cream and cilantro. Cover and cook on low for 7-8 hours. Or on stove top for a couple of hours, stir mixture to break up chicken. Top with sour cream and cilantro or parsley
