"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

½ lb bacon
1-bunch scallions
1 lb ground beef
1 15 oz tomato sauce
1 can lima beans
1 can pork and beans
1 can pinto beans
1 can red beans
1 can Cajun beans**
1 can corn
1 Tbsp vinegar
¼ c brown sugar

Chop bacon and sauté it with the scallions. Set aside. Brown the beef in the same pan. Combine all the ingredients in either a large pot on the stove or Crock-pot. Simmer approximately 2 hours, stirring at least every 30 minutes.
**Cajun beans are hard to find. We have experimented with a variety of spicy beans and any that you choose would be fine.
