½ lb bacon 1-bunch scallions 1 lb ground beef 1 15 oz tomato sauce 1 can lima beans 1 can pork and beans 1 can pinto beans 1 can red beans 1 can Cajun beans** 1 can corn 1 Tbsp vinegar ¼ c brown sugar
Chop bacon and sauté it with the scallions. Set aside. Brown the beef in the same pan. Combine all the ingredients in either a large pot on the stove or Crock-pot. Simmer approximately 2 hours, stirring at least every 30 minutes. **Cajun beans are hard to find. We have experimented with a variety of spicy beans and any that you choose would be fine.
