12 cups chopped squash (any kind)
4 cups chopped onion
1 cup green pepper
2 tbsp. tumeric
5 tbsp. salt
2 1/2 cup vinegar
4 1/2 cups sugar
1 medium jar pimentos
2 tbsp. pickling spices
2 tbsp celery seed

Directions:

in a large bowl (non plastic) place squash, peppers, and onion. Sprinkle tumeric and salt over mixture. Cover and refrigerator over night. Next morning drain and rinse. In a large pan, mix vinegar, sugar, pimentos, pickling spice, and celery seed. Bring to a boil, add vegetables and simmer 30 minutes. Pack in hot jars and seal. Yield: 6-8 pints Prep: 20 min.
