4 cups hot cooked yams
3 tbs butter
1/3 c half and half
1/2 tsp nutmeg
1/2 tsp salt
1/4 tsp white pepper
2 tbsp brown sugar
2 tbsp dark rum
1 tbsp grated orange peel
2 tbsp coarsely chopped pecans
1 tbsp butter

Directions:
Directions:
Combine first eight ingredients in mixer and beat well
-Add enough half and half to make yams fluffy
-Turn into buttered casserole
-Sprinkle with orange peel and pecans, dot with butter
-Bake 375 degrees for 20 min
