1 egg
3 egg yolks
2 teaspoons salt

Directions:
Directions:
Put all ingredients into bowl, (except water), and mix thoroughly. Add water 1 tablespoon at a time until you can make dough into a ball. Then knead dough on a floured board for approximately 8 - 10 minutes until the dough is stretchy and smooth. Then let dough sit for 10 minutes. FOR DUMPLINGS: Roll out portions of the dough on a floured covered board until they are approximately 1/16 inch thick and cut into 2 inch squares then drop into boiling chicken broth one at a time while continuously stirring broth while you are dropping in squares. Boil the broth and dumplings until they are tender, then serve. FOR NOODLES: Roll out dough the same way and cut the rolled out dough into 3 inch long lengths and then cut noodles into the desired widths. Spread noodles out on flat surface and let dry. They can then be used at this time or can be saved for later use.
