Mix thoroughly..
1 c soft shortening
1 1/2 c sugar
1 egg

Stir in..
9 oz. can crushed pineapple with juice (1 c)

Sift together and stir in...
3 1/2 c sifted flour
1 tsp. soda
1/2 tsp. salt
1/4 tsp nutmeg

Mix in..
1/2 c chopped nuts

Directions:

Chill at least 1 hour. Drop rounded teaspoonfuls about 2 inches apart on lightly greased baking sheet. Bake until, when touched lightly with finger, no imprint remains.

Temp: 400 degree oven
Time: 8 - 1- minutes

This is the second Pineapple Cookie recipe in Mom's collection. This recipe is from Betty Crocker's Cookbook (1956) and may be the one Mom used as part of the cookie assortment for her well known holiday cookie plate gifts. They are moist and taste just like hers. Mom would drizzle hers with a thin white icing which added a festive look and the extra sweetness was appreciated.
