6 slices bacon, diced
1 small diced bell pepper
2 T minced onion
3 c cooked hash browns (fresh or frozen)
1/2 c grated cheddar cheese
6 beaten eggs, seasoned with salt & pepper

Directions:
Directions:
In a large skillet saute bacon until crisp. Romove with a slotted spoon and drain on paper towels. Drain off all but 3 T bacon drippings. Add to remaining dripping the bell pepper, onion, potatoes and sprinkle with salt and pepper. Cook, stirring over medium heat until potatoes are golden. Sprinkle the cheese over mixture and stir until cheese is melted. Pour eggs into the skillet and cook over low heat until set.
