1 dozen carrots or 4 15 ounce cans of carrots
1 medium sized onion
1/4 cup butter
1-1/2 cups Velvetta
Cracker crumbs about 1 cup
Salt and pepper to taste

Directions:
Directions:
Cook carrots if not cooked already. Brown the onion and butter. Place the drained carrots, onions, and butter in casserole layering this with the cheese. Top with crumbs and seasoning.
