1/4 cup invert sugar recipe on page
12ou milk
1 /2 cup whipping cream
1 /8 tsp. salt
1 /4 cup butter
1/2 tsp. cream tartar
1 tsp. vanilla
1 /2 cup finely chopped nuts( Optional)
1 1/4 lbs. real milk chocolatemelted for dipping

Combine first 7 ingredients in a 21 1/2 quart saucepan.cook with minimum stirring to 240* no a candy thermometer. Gradually lower heat as mixture thickens; pour onto cold surface, cool slightly. work with spatula until thick and creamery; add vvanilla as you work. Add nuts if desired;Let candy rest for 1 hour form into ballsand dip in melted chocolate.
