2 quarts chopped figs (about 5 pounds)
6 cups sugar
3/4 cup water
1/4 cup lemon juice

Directions:
Directions:
To prepare chopped figs, cover figs with boiling water and let stand for 10 minutes. Drain, stem, and chop figs.
Combine figs, sugar and water in a large pot. Bring to a boil, stirring until sugar dissolves. Cook rapidly until thick, stirring frequently to prevent sticking. Add lemon juice and cook one minute longer.
Pour into sterilized jars, leaving 1/4 inch from the rim. Add lids and bands and process in a boiling water bath for 15 minutes.
