2 lbs fresh ripe tomatoes
2 c beef, chicken or vegetable broth
2 T olive oil
Salt and pepper to taste
2 garlic cloves
4 leaves basil, shredded or 1/4 tsp dried thyme
Pinch sugar
Chopped parsley

Directions:
Directions:
Peel, skin, core and lightly seed the tomatoes. Heat the olive oil in a soup pot, add the tomatoes, and cook over moderate heat until they almost melt. Add the garlic and basil and cook 5 minutes longer. Add the stock or broth, salt and pepper to taste and sugar. Simmer for another 5 minutes. Garnish with chopped parsley.
