2 lbs. ground beef
1 can Ortega Traditional Refried Beans
3-4 medium potatoes, diced and boiled
1 medium onion, chopped
3-4 c. cheddar cheese, shredded
2-3 cans mild enchilada sauce
taco seasoning
flour tortillas

Directions:
Directions:
Brown and drain ground beef, add taco seasoning and prepare the same you would for taco's. Add refried beans, potatoes and onion to meat mixture. Stir and add 1 c. of cheese; stir. Heat enchilada sauce in skillet. Dip tortillas in sauce, spoon some of meat mixture in center, sprinkle with cheese and roll up. Repeat until you are out of meat mixture. Pour remaining sauce over enchiladas and top with cheese. Bake at 350 for 15-20 minutes or until hot.
