3/4 c shortening
2 c sugar
1/2 tsp. vanilla
1/2 tsp lemon extract
3 c sifted cake flour
3 tsp baking powder
3/4 tsp salt
1/2 c milk
1/2 c water
6 stiffly beaten egg whites

Directions:
Directions:
Stir the shortening to soften. Gradually add sugar and cream together until light and fluffy. Add extracts. Sift flour, baking powder and salt. Add to creamed mixture alternating with milk and water. Fold in egg whites.

Pour in paper lined 9 x 9 x 1 3/4 inch pans (2).

Bake at 350 degrees for 30 minutes

Ice with favorite white icing.

This was my favorite birthday cake. Mom baked it for me every year well up into her 90's. I miss this tradition.
