3 large green tomatoes
1/3 cup all purpose flour
2 eggs
1/2 cup white cornmeal
2 tbsp grated parmesan cheese
3/4 tsp salt
pinch red pepper
1/8 tsp black pepper
1/3 cup vegetable oil

Directions:
Directions:
Slice tomatoes about 1/2 inch thick. Drain slightly and sprinkle with salt. Place 3 shallow dishes on your work surface. Spread flour in one dish. Lightly beat eggs in another dish. In the third dish, mix cornmeal, cheese, red pepper, salt and black pepper. Heat oven to 200 degrees F. Coat tomatoe slices with flour, dip in egg; coat with cornmeal mixture. Heat 3 tbsp oil in large skillet; cook 3 - 4 minutes per side or until golden brown and crispy. Transfer cooked slices to paper towel lined baking sheet and keep warm in oven until finished with all slices.

Fried green tomatoes have been around the table in the spring for as long as anyone can remember. Ask your green grocer to provide you with some tomatoes. Wonderful treat with pork chops, potatoes and salad.
