1 T. fine dry bread crumbs
1 T. grated parmesan cheese
Dash ground red pepper
1 small chicken breast, skinned, halved lengthwise and boned
1 beaten egg
1 tsp. water
1 T. cooking oil
1 small potato, peeled and thinly sliced
1/3 c. tomato sauce
1/8 tsp. dried oregano, crushed
Dash garlic powder
Shredded mozzarella cheese

Directions:

Stir together the bread crumbs, parmesan cheese and red pepper. Dip chicken breast in a mixture of the egg and water. Coat with crumb mixture. In a skillet cook chicken on both sides in hot oil till brown. In an individual casserole arrange the sliced potato. Place chicken atop potato. Stir together the tomato sauce, oregano, and garlic powder; pour over chicken and potato. Cover and bake in a 350 oven about 35 minutes or unti done. Sprinkle with some mozzarella cheese. Return casserole to oven and bake 3 more minutes or until the cheese melts.
