4 T. butter`
4 large potatoes-thinly sliced
2 medium onions-finely chopped
2 carrots-sliced thin
4 c. milk
2 c. chicken stock
1 T. salt
2 T. flour
1 c. sour cream (room temp.)
chopped chives

Directions:
Directions:
Melt butter in large saucepan. Add potatoes, onions and carrots. Cover and cook over low heat, without browning for 50-60 minutes, or until vegetables are tender.
With a potato masher, mash vegetables right in pan. Add milk, stock and salt. Cover and continue to cook without boiling for 45 minutes.
Mix flour, 1-2 tsp. at a time into sour cream. Stir a little hot soup into sour cream mixture. Blend thoroughly, then gradually return all to pan. Heat until thickened but do not boil. Sprinkle with chives and serve.
