3 T vinegar
2 T olive or vegetable oil
2 T snipped parsley
1/2 tsp sugar
1/2 tsp salt
1 cup quartered or halved cherry tomatos
1/2 cup sliced black olives
1/2 cup chopped red onion
2 cups cooked white or brown rice.

Directions:

Combine first five ingredients in a mixing bowl for the marinade. Add the rest of the ingredients to the marinade and toss lightly to combine
