1 tbsp butter
4 to 6 small shrimp, boiled and peeled
1/2 small tomato, diced
1/4 cup onion, diced
1/4 cup jalapeno pepper, chopped
1 tbsp bacon bits
1/4 cup shredded Cheddar cheese
1 tbsp shredded mozzarella cheese
2 flour tortillas
sour cream

Directions:
Directions:
In a saucepan over medium heat, melt butter. Add shrimp, tomato, onion, garlic and jalapeno, stir bacon bits in last.
In a small bowl, combine Cheddar and mozzarella cheeses; spread about half the mixture over a flour tortilla. Spread shrimp and bacon mixture over the top, followed by remaining cheese.
Cover with second tortilla and brown in pan until golden on both sides and cheese has melted. Cut into wedges, garnish with sour cream and jalapenos.
