1/4 c butter
1 1/2 T cornstarch
1/2 c finely chopped onion
4 c chicken broth
1/2 c finely chopped carrot
4 c half and half
1/2 c finely chopped celery
1/8 tsp baking soda
1/4 c flour
1 lb Old English cheese, grated
salt and pepper to taste

Melt butter in large soup pot (about 4 quarts). Add onion, carrot and celery. Saute until tender. Stir in flour and cornstarch, cooking until bubbly. Gradually blend in broth and half and half until smooth. Add baking soda and cheese. Season with salt and pepper. Cook until cheese is melted and soup is heated through. Don't boil or will separate. Still tastes ok but looks lumpy.

I have only ever used the Old English cheese spread in the small jars in the refrigerator section of the grocery store. It takes 4 small jars. This reheats but be careful not to boil. I also substitute skim milk. It is not as creamy but also not as fat laden
