3 onions, chopped
1/4 cup olive oil
1 clove garlic, minced
1 lb. spinach
9 cups chicken broth
1/4 cup rice, raw
1/4 cup waffle batter
1/8 cup parmesen cheese

Directions:
Directions:
Saute onions and garlic in oil, but do not brown. Chop spinach, add to above and smother for 10 minutes. Add broth and rice, boil for 20 minutes or until rice is cooked. Add cheese to waffle battle and drop batter through a colander into soup. Bring to boil, remove from heat. Season with salt & pepper and serve.
