2 T. olive oil
1 onion
1 small can tomato paste
2 qt. water
1 bay leaf
1 tsp. thyme
sugar to taste
1 lb. stew beef
1 lb. orzo

Directions:
Directions:
Cook orzo on stove per box instructions. Drain and set a side. In a large stock pot heat oil. Add beef and sauté on high heat for 1 or 2 minutes. Add onions and sauté till onions become translucent. Turn heat down to medium and add tom. paste, water, thyme, bay leaf, and a pinch of sugar(to taste). Let simmer till meat is tender. Reduce heat to simmer and add cooked orzo cover with lid and let simmer for at least 1 hour. Stirring occasionally. Turn off heat and let sit for 1 or 2 hours more. Then serve.

Traditionally this is made with lamb cubes. You may also use chicken if you would like.
