6 small ducks
3 small onions, cut in half
salt to taste
1/2 cup vinegar
Red peppercorns
Thyme
worcestershire sauce
Bay leaves
salt and peppper to taste
6 slices bacon
2 tbsp. sugar
3 tbsp. cornstarch
1 6oz. can frozen orange juice
2 cups water
1/2 cup chopped olives

Directions:
Directions:
Clean ducks, put half of onion in each oneand salt generously insideand out. Place in a large pot to tenderize, using half pot full of water and adding, vinegar, peppercornsthyme,worcestershire sauce,and bayleaves. Bring to a boil. Boil until ducks are tender but not falling off bones Remove ducks from vinegar solution, wash and remove onion. Arrange breast side down in deep roasting pan. Sprinkle with salt and pepper and put a slice of bacon on each bird. Mix sugar and cornstarch and blend with orange juice. Slowly add water and cook over low heat until mixture is hot. Add olives and pour sauce over ducks. Bake at 350*covered about 1 hour basting often.
