3 (8oz) pkg. cream cheese (room temp) 1 Tbs vanilla 3 eggs (room temp) 3/4 c. sugar vanilla wafers (about 34) 1 can pie filling. (cherry or your choice.)
Cream all ingredients except the wafers. Place 1 wafer flat side down in a muffin tin lined with cupcake liners. pour batter into each tin ~ 1/2 full. Bake at 350ºF for 15 - 20 minutes. (Until centers are dry.) Place the pie topping on while the tarts are hot. Refrigerate.
