1 cup buttermilk
1 tsp baking soda
1 tsp baking powder
1/2 cup butter or margarine
1/2 cup vegetable shortening
2 tbsp light cream
2 cup white sugar
5 eggs, separated
1 tsp vanilla
2 cups flour
1 cup flaked coconut
Frosting:
8 oz. cream cheese
1 stick margarine
1 tsp. vanilla
4 cups powdered sugar
2 tbsp light cream
1 cup coconut

Directions:
Directions:
Preheat oven to 325. Grease three 9 inch cake pans. In a small bowl dissolve soda, set aside. In a large bowl cream together, butter, shortening, and sugar, beat until light and fluffy. Mix in well beaten egg yolks, and beat mixture until light and fluffy. Add buttermilk, flour, baking powder, and flaked coconut. Beat egg whites until they stand in peaks. Add tbls. of sugar and beat a few min. then fold into cake batter. Pour into floured pans. Bake 30-35 minutes or until toothpick in center comes out clean. Cool and frost. Servings: 12 or more Prep: 20-25 min.

I have baked this cake and eaten ones cooked by other people and always found it delicious. I even made one and forgot the buttermilk, and it was very good also. It gave the family a big laugh, and I was laughing too, but just glad company wasn't coming over.
