12 tbsp. butter
1/ 2 onion chopped fine
1 1/2 cups rice
salt
Freshly ground pepper
1/2 cup raisins
3 cups chicken broth
12 juniper berries
6 rock cornish hens
1 cup red wine

Directions:
Directions:
Preheat oven to 325*. Melt 4 tbsp. of thr butter in sauce pan. Athe onion and cook over medium heat until soft;add the rice, a sprinkle of salt and pepper, and the raisins. Slowly stir inthe chicken broth cover and simmer for 20 minutes, until rice is tender. Put 2 juniper berries in each hens cavity. stuff with the rice
skewer and close; Rub hens with 4tbsp. butter and sprinkle with salt and pepper to tastePlace hens in shallow pan,not touching.Melt the remaining 4 tbsp. butter with the wine; brush hens every 10 minutes and roast 50 to 60 minutes Serve with pan juices as a natural sauce.
