2 egg whites
1 3/4 cups sifted confectioners' sugar
1/8 teaspoon cream of tartar or 1/2 teaspoon lemon juice
1 teaspoon vanilla

Directions:
Directions:
Beat egg whites with 2 tablespoons sugar for 3 or 4 minutes; then add same quantity of sugar, beating same length of time until half the sugar has been used. Add the cream of tartar/lemon juice with the second quantity of sugar, gradually as mixture thickens. Now continue adding sugar, a tablespoon at a time, beating several minutes between each addition, until a knife cut down into the frosting makes a clean cut that will not close again. Mix in vanilla. The success of the frosting depends upon thorough beatings between additions of sugar.
