"The tradition of Italian cooking is that of the matriarch. This is the cooking of grandma. She didn't waste time thinking too much about the celery. She got the best celery she could and then she dealt with it."--Mario Batali

Ingredients:
1 cup sugar
1 cup pecans- broken chunks and pieces
1/2 cup light corn syrup
1 Tbs margarine
1 tsp vanilla
1 tsp baking soda

Directions:
Directions:
Combine sugar, pecans and syrup in a 2-quart microwave safe bowl. Cook on high for 8 minutes
(my current microwave does it in 4 min 45 sec- I guess you will just have to do it a few time to get it down for your particular microwave). Add baking soda and stir, then quickly pour on to a greased cookie sheet. Spread into a thin layer. Let cool completely, then break into pieces and store in an airtight container.

Personal Notes:
Do not attempt to make this candy during humid weather. It will turn out very sticky.
