3-4 chicken breasts (Use either chicken strips or cut up cubed chicken breast)
3 eggs (beaten)
1/2 cup bread crumbs
2 cups shredded Monterey Jack cheese
1-8 oz. package of mushrooms sliced
3/4 cup chicken broth
1-2 T. butter
Season with salt/pepper to taste

Directions:
Directions:
Soak chicken in 3 beaten eggs for 3 hours or more. Bread chicken with bread crumbs and then brown in pan with butter.
Place chicken in greased pan; then add sliced mushrooms, Monterey Jack cheese and then the chicken broth. bake for 45 minutes at 350, then uncovered for 10 minutes to brown cheese.
