2-3 lbs. chicken breast (cooked and chunked), 1 can chopped green chiles, 3 cans green chile enchilada sauce, 2 lbs. pepper jack cheese, 1 pkg medium flour tortillas, minced garlic or powder to taste, 1 c. sour cream.

Directions:
Mix cooked chicken, can of chopped green chiles, garlic, and i can of enchilada sauce in pan over low heat. When warmed add half of the cheese and sour cream. Stir just until mixed thoroughly and remove from heat. Warm tortillas about 20 seconds to they are pliable. Pour enchilada sauce in the bottom of a 9x13 pan, just enough to cover the bottom. Scoop a spoonful of chicken mixture in tortilla, roll and place in pan. When all tortillas are filled and in pan, cover with the remaining enchilada sauce, and then top with the remaining cheese. Bake uncovered for 15 to 20 minutes at 400
