1/2 lb. beef, 3/4 c. chopped onion, 3/4 c. chopped carrots, 3/4 c. chopped celery, 1 tsp. basil, 1 tsp. parsley, 3 c. chicken broth, 4 c. diced peeled or unpeeled potatoes, 1/4 c. flour, 8 oz. Velveeta cubed, 1-1/2 c. milk, 3/4 tsp. salt, 1/4 tsp. pepper, 1/4 c. sour cream.

Brown beef, drain, and set aside. Saute carrots, celery, onion, parsley, basil, and 1 T. in same pan. Add broth, potatoes, and beef. Bring to a boil. Reduce heat, cover, and simmer for 10-12 minutes. In a skillet, melt remaining butter & add flour. Cook and stir for 2 minutesand add to soup. Add cheese, milk, salt, and pepper. Remove from heat and add sour cream.
