2 c self-rising flour
3 tbsp sugar
1 egg beaten
1 c milk
3 tbsp shortening melted
1 tbsp grated orange rind
24 mandarin orange sections drained

Directions:
Directions:
Combine flour and sugar in a large mixing bowl. Combine egg, milk, shortening, and orange rind. Add all at once to flour mixture. Stir only until flour in moisten. Fill greased muffin tins 2/3 full. Place 2 mandarin orange sections on each muffin in opposite directions to form a butterfly. Bake at 425 for 20-25 minutes. Makes 12.
