8 c. mixed greens, 4 oz. dried cherries, 6 oz. mild goat cheese, 1/4 tsp. pepper, 1/2 lb. piece of pancetta (cut into 1" pieces), 1/4 c. olive oil, 1 T. finely chopped garlic, 1 T. finely chopped thyme leaves, 6 T. sherry vinegar.

In a large serving bowl combine greens and dried cherries. Crumble goat cheese on top and sprinkle with pepper. In a large skillet cook pancetta in oil over moderate heat until lightly brown. Pour off about 3 T. of grease (leave about 1/3 cup). Add garlic and saute mixture, stirring, until garlic is golden. Carefully add thyme and vinegar. Increase heat to moderately high and boil 1 minute. Add mixture to salad, toss and serve.
