1 cup shortening (Part butter)
2 cups brown sugar
2 eggs
1 teaspoon soda
1-1/2 teaspoons baking powder
1 cup ground coconut
1 teaspoon vanilla
4-1/3 cups flour
1/4 teaspoon salt
1/4 cup hot water

Directions:
Directions:
Cream shortening, add sugar gradually, blend in well beaten eggs, add soda to hot water, then add to creamed mixture. Blend in coconut and vanilla, sift flour before measuring, sift dry ingredients, add to other mixture and mix well. Chill in bowl then form on cookie sheet into oblongs and press 1/4 inch with tines of fork. Dip fork into flour and hit off excess flour. Bake 8 - 10 minutes in moderate oven. Store in air tight container.
