Sift flour with baking soda, salt and sugar into medium bowl.
Beat egg, add milk and melted, cooled butter until well
mixed. Pour into dry ingredients , and beat only til
combined. Batter will be lumpy.
Heat griddle or heavy skillet. Drop a little water onto
griddle . At correct temp water should roll off in drops.
Grease surface with butter, Use 1/4 cup batter for 4"
pancakes. Cook until bubbles form on the surface and the
edges look dry. Turn, cook about 2 minutes longer, or until
nicely browned on underside.
If you would like blueberry, or other fruit pancakes, pour out
