Ingredients: |
Ingredients: Pastry: 2/3 cup soft shortening 2 cups sifted all purpose flour 1/2 tsp baking powder 1/4 cup sugar 1/2 tsp. salt 1 egg beaten with 2 Tbsp. milk
Lemon or Lime Filliing:
1 can Eagle Brand condensed milk juice from 3 lemons or limes (no bottled juice)
Strawberry Filling:
1 pkg. (4-serv size) vanilla pudding 1 jar strawberry jam fresh strawberries, sliced long way or frozen

Directions: |
Directions:For the Pastry: Cut in shortening and dry ingredients with fork. Mix in egg and milk mixture. Chill; form into mini tart pans. Bake for 8-10 minutes at 450º.
For the lemon or lime filling; Mix juice with milk until thickened; fill shells and top with cool whip
For Strawberry filling; Melt jelly and coat strawberries. Follow pudding instructions, fill shells & top with glazed strawberries. |

Notes: This recipe was in one of the St. Ann's Cookbooks from the Ladies of St Ann's from 1973. I found this one with Mom's name on it. I do remember these tarts, they are delish. I'm not sure about the lemon filling as to how it thickens. We'll have to ask Mom after her 70th birthday.
