18 slices (about 3/4 in. thick) from a loaf of slightly dried-out Italian bread
6 oz sliced ham, stacked and cut in strips
1 box (10 oz) frozen spinach, thawed and squeezed dry
1 jar (12 oz) raosted red peppers, well drained, cut in strips
4 oz extra-sharp Chedder cheese, shredded (1 cup)
4 scallions, sliced
5 large eggs
2 1/2 c whole milk
2 T Dijon mustard

Directions:

Lightly coat a 2 qt shallow baking dish. Cover with half the ham, spinach, red peppers, cheese & scallions.
Cover with 12 slices bread, overlapping. Top with remaining ham, spinach, peppers, cheese & scallions.
Whisk eggs, milk and mustard in bowl; pour evenly over strata. Cover with foil; refrigerate at least 2 hrs, or overnight.
Heat oven to 350. Bake, covered, 40 min. Remove foil and bake 10 to 15 minutes more until puffed.
