Ingredients:  
1/2 c olive oil
4 cups zucchini, sliced thin
1/2 tsp salt
pinch of pepper
1/2 c chopped onion
4 eggs, slightly beaten
1 cup Bisquick
1 c grated/shredded cheese (Swiss, Parmesean, Provolone, Velveeta)

Directions:
Directions:
Mix all ingredients together and bake in a 9 x 13 inch greased pan for approx 30 minutes at 350.

Personal Notes:
Zucchini can be grated or chopped rather than sliced. Any cheese can be used, I like to use 2 or 3 different ones, along with some garlic and more onion.
