1 c flour
1-1/2 tbsp. shortening
3/4 c dark brown sugar - firmly packed
1 c molasses or dark Karo syrup
1 egg - slightly beaten
3/4 c hot water
1 tsp. baking soda, dissolved in 1/4 c hot water (in addition to 3/4 c water)
1 9 inch deep dish pie crust, unbaked

Directions:

Mix the flour, sugar and shortening together until crumbly. Set aside 1/2 cup of this mixture to be used as crumb topping. Add the molasses, egg and baking soda/water mixture to the remaining flour mixture. Pour the batter into the unbaked pie crust. Sprinkle the reserved 1/2 cup of crumbs over the top. Bake in a preheated 400 oven for 5 minutes. Reduce the oven temp to 350 and bake for 30 minutes. As the shoo-fly pie bakes, a gooey wet bottom will form in the pie crust, below the molasses crumb cake.
