2lbs fresh mushroom
2lbs butter, melted
16oz. flour
2 qts chicken stock, hot
3 qts milk, hot
1 qt half-n-half, hot
4 egg yolks
1lb peas
8oz pimento, drained & chopped
Salt & Pepper to taste
9 lbs. chicken or turkey, cubed.

Directions:
Directions:
Saute mushrooms in butter in heavy skillet.
Set aside.
Mix flour with broth, add to pan, stir. Add half-n-half. Simmer 5 minutes. Add eggs yolks, chicken and pimento, stir thoroughly until hot. Do not boil.
Add salt, pepper and mushroom, and spoon over baked shells. These shells can be bought in the frozen section.

Mom and I made this for the 1st time for one of Barbara's baby shower's. We had a big crowd so this worked out perfectly, and it's delicious too.
