Cook 7 minutes:
1 cup water
1/2 cup rice
1/4 teaspoon salt
Add, add and cook: 1 1 1/2 hours on low heat:
1 quart milk
1/4 cup butter
Some lemon or orange peel (optional)
1 stick cinnamon (optional)
Add: 2 eggs, beaten
1/2 cup sugar
1/2 cup raisins
1/2 teaspoon vanilla
Serve warm or chilled, sprinkled with cinnamon or nutmeg. (Leave citrus peel and stick cinnamon in and remove just before serving.)
