4 large or 6 medium sweet potatoes
Salt & Pepper
1 stick butter (or more if needed)
1/4c. brown sugar

Directions:
Directions:
Clean sweet potatoes, do not peel.
Add potatoes to pot of boiling water. Boil 20-30 min. or until tender when pierced with meat fork. Remove from water into colander. Let cool.
Peel skin and cut longways into quarters. Dot with thin slices of butter and sprinkle brown sugar over potatoes. Bake 350 for 20 min. or until potatoes look carmelized.

Mom loves Sweet Potatoes, we have to have them with our Thanksgiving meal. She has made them like this for years and we all love them. Great as a side dish with Baked Chicken or Turkey or Ham.
Two of my girls, Jessica & Elena especially, love these Sweet Potatoes. Yum!!!!!!!
